I see the Knights as having very definite personalities. In fact, it was the pages that I saw described in some books as meaning news or some such, rather than a person. Or also children, as opposed to full fledged personalities. In fact, I now seem to recall Knights as depicting the impetuous and rebellious nature of teenagers, while queens and kings would be fully grown men and women.
Still, I sometimes find it hard to accept the authority of what books say on this subject, specially since it all depends on what book you are reading. So how reliable are they? Well, I'd say as much as we want them to be, I guess.
I find it very interesting the way you are tracking the progress of your friend through different Court personalities. It is true we must change as we develop.
Me, I see myself as a mad Knight of Wands, but haven't yet lost hope of getting to be more like the Queen of Wands: maybe when I am a stayed old little lady, crotcheting away like mad, hee, hee.
As for your connection to the King of Cups, I heartily agree. I also see you as steady, responsible, creative, caring and tolerant. I find it curious that the side of you that needs to feel in control of your emotions also comes up in your Strentgh card and your Chariot. I mean, the word "control" tends to come up in the meanings of all three cards, so it must be important to you. Have you noticed?
