I was thinking that the Eye is probably one of the most commonly used symbols for human kind and represents many things to many people.

For me when i think of eyes i think of 2 things...

The eyes are the windows to the soul...which i am sure many people have heard.

The other thing i think of is the 3rd eye or the 6th chakra.

I think the image of an eye is a very powerful symbol and symbols with eyes are littered throughout history and the media.  

I wanted to know what other people think about the eye as a symbol and what it means to them? or what eye symbols they know?

The ancient Egyptians used the eye of Horus to protect their boats.
I found out that the Maltese do the same thing, so I bought a couple while I was out there teaching and stuck them on my boat, the trouble was I couldn't work out which way round they went and neither could one of the Maltese guys who'd come back for so extra teaching.
I stuck them on, left them to dry for a couple of days then took it out fishing in the bay. To cut a long and terrifying story short I sank and got hauled out by the lifeboat.
I never even thought about the eyes until you triggered the idea, thank you. I'll take them off before I got out again (my wife threatened to divorce me if I go out again, is that a fair swap?)

I agree...we all hope that the eye is the window to our soul
But
Many times it is cluttered by our Ego.

In order for the eye to be the window to our soul, we need to work with our Ego, the one who always will tell us what we see...but colored by our preferences.

When you start to notice your Ego and then by meditation and enlightenment try to move your eye sight more towards "Your Higher Self", then you will notice that your view will change drastic, you will be much more calm and secure.

When people look such a person in the eye, then it will works like window to the soul

Hehehe but the last might not be under symbol discussion

I looked up the eye of Horus and saw that its used for alot of reasons but it does have a protective aspect.  Oh poor you about your boat, thats not so good.  I like my feet on the ground, I found some interesting facts about the Eye of Horus in this link, I thought you might want to have a look?

aparently the eye of horus can be divided up and each bit has a meaning for our senses (all 6 of them)
thought is counted as a sense...before you all shout at me and tell me we have 5, 7, 8 etc lol!

I thought it was interesting.
